My 14-Day Clean Diet Challenge Update

A Farewell party and the home stretch for recipe development on my new 14-Day Clean Diet Challenge. A wonderful group of 25-30 of us spent Saturday evening at The Stonecat Cafe to send off my daughter Sarah on her adventures living ‘off the grid’ in California.  My heart is sad and yet happy for her all at the same time.  I am already planning my first trip out there this August, oops, I guess I better let her know 🙂 I’m getting to the home stretch of developing my 14-Day Diet Challenge.  The recipes are simple and delicious.  I added a favorite called Black Bean Chili Bake to my newsletter this month.  It was so yummy and satisfying!  The corn kernels added just the right amount of sweetness.  My recipes are colorful AND flavorful, check out my newsletter for this months sample recipe. To help reduce inflamation and cravings, can you go without sweetners, white flour, soda and caffeine for 2 weeks?  Eating a clean, plant based diet will help you lose weight and feel more energetic…and if I can lose 5 lbs in 6 days, I bet you can too! One easy way to add flavor to recipes are these small packs of herbs I found at Wegmans, our local grocery store.  Instead of buying a whole bunch of cilantro for a recipe, you can buy smaller portions. My 14-Day Clean Diet Challenge Day 5

What a joy it is to be fine tuning my 14-Day Clean Diet Challenge!  I love spending time in the kitchen creating the perfect recipes for my clients to enjoy.  Today was a day of just that, trying some recipes over again to get them just right!  My breakfast fruit smoothie was nice and cool with frozen blueberries added, perfect for summer.  Did I mention summer is right around the corner? Do you remember being a kid and laying on the grass looking up through the tall grass?  Summer as a kid for me was climbing mountains, having lunch with my brother at our favorite picnic rock, climbing trees, catching trout in the brook with my bare hands…oh those were the days.  What pleasant summer memories do you have from childhood? Eating was different too.  We had fresh vegetables from the garden, we picked berries all summer long, and ate mostly whole foods.  I’m dating myself a little, but we didn’t have a McDonald’s until I was in high school, and even back then the Big Mac gave me a terrible stomach ache.  What would the world look like today if we all got back to eating whole foods?  Unprocessed, unbleached, unsprayed, unsulfured, non-toxic…. do you think there would be less disease?  I’m guessing so! My 14-Day Clean Diet Challenge Day 4

Are we all trying to lose a few lbs before summer? Eliminating certain foods from our daily intake can help lead the way to a slimmer body.  I invite you to explore the 14-Day Clean Diet Challenge with me…more details coming soon, as we are still in development. Raw buckwheat is an excellent source of protein, and is the main ingredient of my breakfast Mock Cream of Wheat.  Do you remember eating Cream of Wheat as a kid?  This recipe will satisfy your morning hunger, without the added gluten and dairy of the original version. Take 1/4 Cup of Buckwheat Groats (raw) with 3 Medjool Dates, and soak them overnight in 1 Cup of water.  In the morning, remove pits from the dates.  Dump the buckwheat, soaking water and dates in a blender.  Add one cored apple and a dash or 2 of cinnamon.  Blend and enjoy! I made delicious Minestrone Soup tonight with 7 vegetables, and Schar Anellini gluten free pasta added in.  My grandchildren loved it!  The homemade corn muffins still need a little fine tuning, but I’d like to get the recipe just right and not have to resort to a package mix. The Clean Diet Challenge is not about feeling deprived.  It’s true a lot of familiar items need to be omitted, but the end result will be amazing.  You will notice cravings disappear, and increased energy levels.  Are you getting curious yet?  Stay tuned… Cheers from The Nutrition...

My 14-Day Clean Diet Challenge Day 3

Breakfast Fruit Smoothie today, oh how delicious! I’m a big fan of greens in my smoothie, but this time I added a banana, a few frozen strawberries and blueberries to the greens… it was a Sunday treat! For lunch I tried my recipe for Corn Tortilla’s with fresh veggies and a homemade dressing, suggested from my friend Pat.  I tried the corn tortilla cold and then warm, but couldn’t decide which I liked better.  My Clean Diet Challenge does not allow bread or gluten products, but corn is ok.  During this Challenge, we are trying to reduce the cause of inflamation in the body for at least 2 weeks.  Participants will have a better understanding after they see first hand how it works, and then decide if they want to continue any of the idea’s for the long term.  Sometimes just breaking a habit for 2 weeks is all we need to stay “clean” from a food or substance that no longer serves us. Even though today was Sunday, usually reserved for a more time consuming recipe, I decided to go with the simple Broiled Chicken dinner.  I always say, “Simple is good”.  Another rule of thumb, keep it colorful for the best eye appeal. (and speaking of eye appeal, I really need to get some new plates… yikes! these were from my mother-in-law 25+ years ago, and they look it!) My 14-Day Clean Diet Challenge Day 2

Recipe included!  I’m on Day 2 of my 14-Day Clean Diet Challenge, and I must admit…today was hard without my morning coffee.  By 1pm I had a headache, and gave in.  The beauty of any diet challenge is that tomorrow is another day to start fresh.  I ate “clean” today, other than that one slip up.  I am ok with it, as we are all human.  I want you to know, this type of thing might happen.  Personally, I’m glad it happened on Day 2, and not closer to the end. My grandchildren were here for breakfast this morning, so I made the Apricot-Nut Breakfast Bars with homemade Date Honey on top.  2 out of 3 enjoyed them, but all enjoyed the Date Honey spread.  On my clean diet challenge, sugar and all sugar substitues are off limits, no matter how organic or natural they are.  However, this Date Honey spread is super delicious and easy to make, with Medjool Dates as the only sweetner.  Yum! Lunch was a Simple Salad, with all my favorite items.  I added a sprinkle of Real Salt, and a touch of lemon juice and olive oil for the dressing, however, I will have salad dressing recipes included.  I really enjoy simple meals, especially since I generally cook for one. Here is a sample recipe from my plan: Fettuccine & Greens Cook 1/2 package Field Day Organic Brown Rice Fettuccine noodles according to package directions.  In another pot, add 1 (8oz) can of Muir Glen Tomato Sauce, 1-2 Cups of chopped or torn Swiss Chard or Spinach.  Let simmer for a few minutes, or...
